Chipotle Lime Almond Crackers

These crackers make a great accompaniment to any cheese or dip, including guacamole or hummus. Ground almonds are mixed with citrus and a kick of spice to bring a twist on getting healthy fats in the diet.

Chipotle Lime Almond Crackers

Ingredients

  • 2 cups (300 grams) almonds, roasted
  • 1 egg (46 grams)
  • 1 tablespoon + 1 teaspoon (20 milliliters) water
  • ¾ teaspoon (6 grams) kosher salt
  • 1 teaspoon (3 grams) chipotle chili pepper seasoning
  • 1 tablespoon (3 grams) fresh lime zest
  • 2 teaspoons (10 milliliters) lime juice
  • 1 tablespoon (3 grams) black sesame seeds

Directions

Preheat oven to 350°F. Grind almonds to a fine crumble in food processor. Meanwhile, in small bowl, combine egg and water. When almonds are ground, add egg mixture, then salt, chili pepper seasoning, zest, and juice. Continue mixing in food processor until dough ball forms. Remove from mixing bowl and divide into 2 equal sized balls. Roll out onto parchment paper to 2 millimeters thick. Use parchment on the rolling pin if the dough sticks. Cut the dough into squares, sprinkle with sesame seeds and lightly press into dough. Bake for 10 minutes. Remove and allow to cool. Serves 8.
