High-Protein Chia Pudding

Mix it tonight, eat it tomorrow. Chia seeds and Greek yogurt make a creamy, filling breakfast with no cooking.

How to make it

  1. In a large bowl or jar, whisk the milk, Greek yogurt, honey, vanilla and cinnamon until smooth.
  2. Add the chia seeds and whisk well for 30 seconds so the seeds do not clump.
  3. Wait 5 minutes, then whisk again. This stops the seeds from settling in one lump.
  4. Cover and chill at least 4 hours, or overnight, until thick like pudding. Stir once before serving. If it is too thick, add a splash of milk.
  5. Spoon into 4 bowls or jars. Top with berries and walnuts and serve cold.

Here is a breakfast you make in five minutes the night before. Chia seeds soak up milk and turn soft and thick, like pudding. Stirring in plain Greek yogurt makes it creamier and gives it a protein boost. In the morning, add fruit and crunch, and you are ready to go. It also works as a snack or a simple dessert.

Why Greek yogurt

A July 2026 Harvard Health article compared yogurts. A 6-ounce serving of plain Greek yogurt has 15 to 18 grams of protein. Plain regular yogurt has 6 to 7 grams. Harvard also says to pick plain yogurt most of the time and sweeten it yourself, with honey or thawed frozen berries. That keeps added sugar low.

About chia seeds

Harvard's Nutrition Source says 2 tablespoons of chia seeds have about 4 grams of protein and 11 grams of fiber. Cleveland Clinic suggests starting with 1 tablespoon a day if you are new to fiber, then working up to 2 tablespoons. Drink water too, since extra fiber without enough water can cause gas and constipation.

Safety first

Do not eat dry chia seeds by themselves. Harvard describes a case where a person ate dry seeds, then drank water, and the seeds swelled and blocked the food pipe. Always let them soak, or mix them into something moist. Cleveland Clinic notes that chia is a choking risk for young children, so soak well and ask your child's doctor first for babies and toddlers. People who have trouble swallowing should be careful with chia.

Make it your way

  • Stir in a spoonful of peanut butter for a nutty version.
  • Use cocoa powder for a chocolate pudding that kids love.
  • Keep portions to about 3/4 cup. Fiber adds up fast.

Keep it covered in the fridge and eat it within 3 days. Add toppings just before eating.
