I love sweet potatoes. I could literally eat one every single day and not get sick of them. This sweet potato recipe will make your taste buds melt.  It’s a soft sweet potato topped with a nutty, crunchy, honey-based coating. And it’s so simple, which makes it perfect for this time of year when we all have so much going on.

If you’re like me, honey and cinnamon are staples when it comes to topping your sweet potato. Pistachios are like icing on the cake and will help your body absorb the beta-carotene found in sweet potatoes. Fat is essential for our bodies to obtain nutrients such as lycopene and beta-carotene in certain vegetables, so don’t be afraid of a little fat — you need it!

This dish will instantly brighten up your mood, and it also makes for an awesome and quick breakfast.


Honey-Pistachio Baked Sweet Potato

Serves 2

Ingredients

  • 2 medium sweet potatoes
  • ¼ cup honey
  • 2 tablespoons chopped pistachios
  • ½ teaspoon cinnamon

Instructions

  1. Rinse and scrub potatoes. Pierce the outside with a fork all over and place on a microwave-safe plate and microwave on high for 7 to 10 minutes (depending on size).
  2. Heat honey, pistachios and cinnamon on stove until warm, about 1 to 2 minutes. Stir halfway through.
  3. Top each sweet potato with a heaping tablespoon of pistachio mixture.

I enjoy whipping up savory dishes without following recipes and just eye-balling ingredients. I usually use one glass liquid measuring cup for an entire recipe — talk about a lot of washing and rinsing, not to mention back straining from reading measurements at eye level.

But if you’re tired of bending over or squatting to read the lines on your measuring cup, or just want more precise measurements, Urban Trend’s Clearview Measuring Cups come in handy. For starters, the measuring lines are on the inside, allowing you to read from almost any angle. I can’t believe I didn’t have to alter my posture to make sure the measurements were hitting the line!

They also come with some handy, built-in hacks that make using these cups extremely convenient. For example, the 4-cup measuring cup has two cups in one, so if you don’t need the large portion, you flip the cup upside down and use the one-cup portion. The Reverso Plus two-cup measuring cup includes five measuring spoons and a 1/2 –cup dry measuring cup attached to the bottom. The Reverso Mini measures up to one cup along, but also includes a detachable two tablespoon measuring spoon on the bottom.

From baking banana bread to making homemade matcha tea lattes, I personally found these measuring cups to be great, particularly if you have lack of storage space like I do, as the measuring spoons and detachable dry cups are built right in. On the downside, there are more pieces to wash, but you can always remove the different components that have not been used before washing.

In this breakfast recipe, the star is roasted strawberries. I know it could save you 25 minutes if you skip this step, but please, do yourselves a favor and roast those babies! Roasted Strawberry Oat Bake Tweet this

Ingredients

  • 1 cup strawberries, de-stemmed and halved or quartered
  • 2 cups rolled oats
  • ½ cup oat flour
  • 1 teaspoon baking powder
  • Pinch kosher salt
  • 1 cup unsweetened almond milk
  • 1 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350°F.
  2. Lay out strawberries on a parchment-lined (or oiled with cooking spray) baking sheet. Roast in oven for 20 to 25 minutes. Remove from oven and let cool.
  3. Turn oven to 375°F.
  4. Spray a 9-inch round baking pan with nonstick spray. Set aside.
  5. In a large mixing bowl, combine all dry ingredients: rolled oats, oat flour, baking powder and salt. In a separate smaller bowl, combine wet ingredients: almond milk, applesauce and vanilla extract. Add wet ingredients to dry ingredients and stir to combine.
  6. Fold in roasted strawberries and pour mixture into prepared pan. Bake for 40 minutes.
  7. Remove and let cool before serving. Serves 6.

Cooking Note

  • Substitute gluten-free rolled oats and oat flour, if desired.

We've all had roasted Brussels sprouts before (I could eat them every day), but adding a touch of smoked sea salt brings out their incredible earthy taste. Trust when I say a little bit of this smoked salt goes a long way.

The other addition to this recipe, cashew cream, could not be any easier to make. All it takes are soaked cashews, water, salt and seasonings of choice. I decided to add maple syrup, because it pairs perfectly with roasted winter vegetables. I cannot tell you how much I love pure maple syrup; it is my ultimate sweetener of choice. Did I mention that it has a bunch of antioxidants? More reason to love the stuff!


Smoked Brussels Sprouts with Maple-Cashew Cream

Recipe by Alanna Waldron, RD

Ingredients

  • 1 pound Brussels sprouts
  • 1 tablespoon olive oil
  • ½ teaspoon smoked sea salt
  • ¼ teaspoon black pepper
  • 1 cup raw cashews, soaked (for at least one hour or overnight), rinsed and drained
  • ½ cup filtered water
  • 1 tablespoon pure maple syrup
  • ¼ teaspoon kosher salt

Directions

  1. Preheat oven to 400°F.
  2. Clean Brussels sprouts and remove dark stems. Cut larger ones in half if necessary.
  3. In a large bowl, combine Brussels sprouts, oil, smoked sea salt and pepper. Toss to coat evenly. Transfer to baking sheet and roast for 25 minutes or until tender; stirring halfway through.
  4. Place soaked cashews in a blender or food processor. Add filtered water, maple syrup and kosher salt. Blend until smooth, about 1 to 2 minutes.
  5. Remove Brussels sprouts from oven and drizzle with maple-cashew cream. Serves 4.

Cooking Note

  • Soak the cashews in advance and make cashew cream up to one day before to save on prep time.

With the warmer and muggier weather, I've been craving light and crunchy foods. This Fennel, Strawberry and Pistachio Salad is exactly what I needed.

The incredible crunch and anise flavor from the fennel plays nicely in this recipe with the burst of sweet strawberries. Plus, fresh-squeezed orange juice in the vinaigrette adds a slight tang and freshness to the salad. And, I can't forget about the pistachios and their nutty flavor and pop of green.


Fennel, Strawberry and Pistachio Salad

Recipe by Alanna Waldron, RD

Ingredients

  • 1 large fennel bulb, thinly sliced
  • ½ cup sliced strawberries (3 to 4 medium strawberries)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh-squeezed orange juice
  • ¼ teaspoon kosher salt
  • 1 tablespoon chopped pistachios

Directions

  1. In a medium-sized bowl, combine fennel and strawberries.
  2. Whisk together the olive oil, orange juice and salt into a vinaigrette dressing. Pour desired amount of dressing over fennel and strawberries. Toss until evenly coated.
  3. Sprinkle pistachios over fennel mixture and serve. Serves 2.

Cooking Note

  • If you are transporting this salad, do not assemble in advance. Instead, store fennel and strawberries in one container, vinaigrette in another container, and pistachios in a third container. Pour vinaigrette over fennel just before serving and top with pistachios.
